Shoot in color and the convert to B&W that way you might get a shot that you were not expecting that you want to be in color.

Definitely convert to B&W in Post-Processing. That way, you never have that "Maaan, I shoulda captured this in color..." feeling.

Agreed...

1. You always have the initial shot in color...
2. Your control and quality are almost always better when converting from color to b&w...

Shoot RAW and don't worry about it. Change the picture style to monochrome and process to your tastes from there. Keep the origional RAW photo as is for later use.

Does the Nikon have that option?

I do understand why it is better to shoot in color, I was just wondering.

I have the Nikon D70 and didn't see this in my manual.

The answer is both. Sometimes I'll take a shot and decide later it works better in B&W. If I'm planning it to be a B&W photo I set my camera to B&W but shoot in RAW mode so that the colour information is retained (I can convert to colour if I want, or more importantly use the colour information for a better conversion later) but the preview is shown in B&W which helps with assessing where the tones sit a bit better. I'm not sure if Nikon does this but with canon you can add virtual filters (green, red, orange, and yellow, I think), which is also helpful. Again if I shoot raw this affects the preview and the default conversion settings but I can still convert to colour or use a different virtual filter.

The D70 and 70s do not have this option.

I only found out a little bit ago.

Fischerfotographik’s comment is close to perfect. I have same regrets before.
